We’ve entered peak grilling season! For my fellow Americans, the grand Fourth of July celebration is next weekend! Here in Rabat, it will be low key since we’ve entered the month of Ramadan and this means most of the population is fasting. If you missed it, Omar and I celebrated America’s independence with quite a fete at the US Embassy last month. Summer grilling is one of my favorite activities. It’s centered around casual, eating in with friends and family. It’s like all that is good about Thanksgiving without the fuss! That said, for all of you planning to host a get-together or planning to bring a dish to share, I’ve compiled some of eating in instead’s best summer grilling recipes. If you are hosting the festivities, pick one or two from each of the categories to plan your menu. If are a lucky guest who has offered to bring a side dish, salad, or dessert, these are my versions of popular favorites. All of the recipes are crowd pleasers. Personally, I’d bring the S’mores —in fact, they’d be perfect to pack up in a container and take them along for the fireworks display!

SALADS & DIPS
No-Cook White Bean Dip – Quick, easy, no stove necessary. This one travels well and can be made a day or two ahead of party time, as long as you don’t eat it all before the party…
Sweet Onion Dip – This one is always a hit and draws impressive eye brow raises when guests learn you made this yourself, not from some package or can!
Broccoli Pasta Salad – Bring a healthy option instead of chips. Guests like me will appreciate it.
Curried Potato Salad (No Mayo!) – Potato salads are an all-American comfort food. This one adds a twist with curry powder and lighten things up by omitting the traditional mayo.
Charred Corn, Tomato & Basil Salad – Homage to my days in the midwest where summer = corn.

Home-made, Home-ground Burgers – Burgers & Grilling. ‘Nuff said.
Chicken Burgers with Mango, Corn, and Black Bean Salad – Red meat isn’t my favorite so while I enjoy a traditional burger or even a hot dog every now and then, these chicken burgers really fit my fancy.
BBQ Ribs with Bourbon BBQ Sauce – Want to host the cook-out everyone talks about? Serve ribs.
FOR OUR VEGETARIAN COMPATRIOTS
Roasted Eggplant and Pickled Beet Sandwiches – These sandwiches take a little more time to prepare, but for once, the vegetarians will not be relegated to grilled Portobello mushrooms. In fact, these are so tasty, you might even need to make enough to feed the non-vegetarians!
