Chocolate Covered S'Mores - All Indoors!

Bring these to any party. Everybody will gobble these fun desserts right up!
Serves: 8
  • 24 graham crackers
  • 12 marshmallows
  • 1 11.5 oz. bag milk chocolate chips
  • colored sprinkles (optional, ok, not really optional in my book)
  • all natural creamy peanut butter (optional)
  1. Pre-heat the oven to 375F.
  2. Break the graham crackers into quarters and place onto a cookie sheet. These are pretty serious dessert snacks, so I like to make these small.
  3. Snip the marshmallows in half with scissors or a knife.
  4. Place one marshmallow on every other cracker. On the remaining crackers place 5-8 chocolate chips. (NOTE: If you are making the peanut butter version, spread some peanut butter on the remaining crackers before dropping the chocolate chips on top of the crackers.)
  5. Place the topped graham crackers into the oven for 5-8 minutes. Keep an eye on these! Check on the marshmallows and as soon as you see them turning golden, take them out. This can really sneak up on you so don’t walk away.
  6. Sandwich the s’mores together. I found it easier to flip the marshmallow side onto the chocolate side. Give the crackers a light squeeze to press encourage the marshmallows to spread.
  7. Let the s’mores rest for 15-20 minutes.
  8. While the s’mores are setting, melt the remaining chocolate chips in a double boiler or in a microwave safe bowl. If you are using the microwave, do this in 15 second increments so you don’t burn the chocolate.
  9. Cover half of the s’mores with the melted chocolate by dipping and spooning the melted chocolate over the s'mores, then sprinkle with the colored sprinkles. I used different colored sprinkles for the peanut butter s’mores so my guests could tell them apart.
  10. Place the chocolate covered s’mores in the freezer for about 8-10 minutes, until the chocolate sets. Try not to eat all of these at once!
